Recipe: Artichoke Stuffed

INGREDIENTS

2 Artichokes
1 lemon
1 caper garlic stuffing
1 parmesan breadcrumb topping

DIRECTIONS

prepare artichokes by cutting in half lengthwise and using a spoon to scoop out the choke , you may also clip the tips of the petals with scissors if you wish
cut the lemon in half and rub it on the cut part of the artichoke, squeezing a bit into the hollowed out cavity
stuff the hollow with approximately 1 T of caper garlic mix
Sprinkle breadcrumbs over the top and between the petals, then drizzle with a bit of olive oil
Bake 375 for 30 minutes while covered, then uncover and bake an additional 15-25 minutes until the petals pull away easily (depending on artichoke size)


Add you like you can zest the lemon before cutting it and add the zest to the caper mix or make a lemon aioli to dip

1 cup mayo
zest of 1 lemon
juice of 1 lemon
1 T minced parsley
Stir well to blend
