RECIPE: Fried Green Tomatoes
NGREDIENTS
1 lb green tomatoes
1 bag fish Fry
2 eggs, well beaten with 2T water
s&p
neutral oil (corn, veg, grapeseed...)
pimento cheese
2 shallow dishes or pie pans
DIRECTIONS
Fill 1 shallow pan with the beaten egg and the other with the fish fry
Core and slice the tomatoes to desired sizes, lay out the slices on a towel to dry a bit and sprinkle lightly with s&p
Dredge the tomatoes with fish fry, then egg, then fish fry again. Try to use one hand for the dry fish fry and the other for the egg wash to keep from breading your fingers.
Warm a wide saute pan over medium heat with a few tablespoons of a neutral flavored oil
Sautee tomatoes for approx. 3-5 minutes per side, remove from pan and allow to drain on a wire rack or paper towels , you can keep them warm on a low oven.
to serve top with a spoonful of pimento cheese
Use them to make eggs benedict, top them with a crab cake, or shrimp salad, add it to a grilled cheese sandwich
